Kitchen Remodel

Haven't been posting because I have been cooking.  Living without a kitchen for 2 1/2 weeks wasn't easy.  At least I had my fridge!  Here are some before/after pics.

Food & Exercise Diary for Wednesday 9/15
Breakfast - Banana, GF orange cranberry muffin, glass of ABVU, calcium supplement & mutli-vitamin.
Snack - Mixed nuts, dried cranberries, honey roasted sunflower seeds.  YUM!
Lunch - V8 juice, hard boiled egg, celery, carrots, broccoli.
Exercise - 30 min on stationary bike, squats w/ bicep curls, ball crunches, planks, etc.
Snack - Apple, pepitas.
Dinner - Homemade beef chili, carrots, pickle.  Scoop of vanilla icecream with caramel sauce.  Definitely a splurge.  Can you tell I've had a MAJOR insatiable sweet tooth recently?

Hips - 32.5
1/2" increase in boobs and waist.  Hmmm....  sweet tooth indulgences showing through?

Breakfast - Pear, GF orange cranberry muffin, small glass of ABVU, calcium supplement.
Snacks - Celery, brown rice cake.
Lunch - Salad with lettuce, garbanzo beans, tomato, broccoli, balsamic and apple cider vinegar.
Exercise - 30 min on stationary bike.  Lunges, ball hamstring curls, etc.
Dinner - Apple.  Salad with tuna (spiced with red curry), lettuce, broccoli, red bell pepper.  Slice of GF zucchini bread.

Breakfast - Banana, hard boiled egg, calcium supplement.
Snacks - Carrots, apple, brown rice cake.
Lunch - Gatorade.  Salad with spinach, lettuce, garbanzo beans, tomato, celery, onion, apple cider vinegar, balsamic vinaigrette.
Dinner - Starving after work, stopped by Raley's Grocery.  Chicken fajita salad: chicken, pepper, red onion, tomato.  Broccoli slaw: broccoli, cauliflower, celery, raisins, sunflower seeds, light dressing.
Exercise - 30 min on stationary bike.  Weight lifting including squats, bicep curls, ball crunches, etc.
Snack - Some popcorn.

Food Diary for Sunday 9/12
Breakfast - Banana, hard boiled egg, GF zucchini bread slice, calcium supplement & multi-vitamin.
Lunch - Salad with romaine lettuce, tomato, jicama, green bell pepper, broccoli, pickle relish, pepitas.
Snack - A couple strawberries and a slice of apple.
Dinner - Dinner with family.  Cranberry juice, BBQ turkey and beef kabob with grilled peppers, onions, zucchini.  Small piece of chocolate-peanut butter cake.  The dessert was a splurge.  I have had an insatiable sweet tooth recently.

9-11 Remembered

9 years ago I was home alone, preparing to leave for school.  I was a senior in high school then.  My dad called me and somberly told me to turn on the TV.  I remember sitting on the floor in front of the TV, absolutely mesmorized as I watched the events of 9-11 unfold.  I was late to school, but the teachers understood.  I watched the news coverage in the band room with friends, some who were concerned about family and friends living in NYC.  A morning that I will never forget.

Breakfast - Homegrown pear, GF orange cranberry muffin, hard boiled egg, calcium supplement & multi-vitamin.
Snack - TJ's dried fruit bar.
Exercise - 30 min on stationary bike.  Weight lifting: lunges, push-ups, etc.
Lunch - Salad with romaine lettuce, jicama, carrots, green bell pepper, pepitas, salsa.  Side of baked beans, TJ's blueberry juice.
Snack - Carrots with ranch.
Dinner - Homemade biscuit, homemade vegetarian chili, celery.  Cup of hot chocolate, slice of GF zucchini bread.

Snack - Apple, small piece of carrot cake.  The power of suggestion eh?  Saw my husband eating a piece and could not resist.  I've had such a major sweet tooth recently.
Dinner - Tuna salad with green bell pepper, onion, spinach, lettuce.  Brown rice cake, TJ's 100% cranberry juice.

Exercise - 30 min on stationary bike.  Weight lifting including lunges, obliques, calf raises.
Dinner - Went to Chili's with parents.  Chips and salsa (my undeniable weakness), chicken breast with 2 strips of bacon and BBQ sauce.  Steamed broccoli and carrots.

Lunch - Salad with lettuce, spinach, garbanzo beans, tomato, cucumber, pickel relish.  TJ's 100% cranberry juice.
Exercise - 45 min on stationary bike.  Weight lifting including squats, ball crunches, push-ups.
Dinner - 2 chicken breast tenders cooked with mixed veggies, stir fry sauce, TJ's soy sauce.  Served over lettuce and spinach.

Breakfast - Banana, hard boiled egg, handful of almonds, calcium supplement & multi-vitamin.  TJ's 100% grape juice.
Lunch - Carrots, cucumber, TJ's goddess dressing.  Brown rice cake, EAS Myoplex Protein Drink.
Exercise - Lots of weightlifting!  My personal trainer (aka my brother) kicked my butt.
Snack - Pear, gatorade, Starbucks Iced Chai Soy Latte
Dinner - Celebrated my birthday with family and friends.  A few corn chips with homemade salsa, pepitas, BBQ chicken.  Salad with romaine lettuce, slices of beef, corn, black beans, jicama, salsa.  Slice of carrots cake and GF vanilla strawberry cake.  Just had to taste both cakes that were made for me.  Ugh, eyes were definitely bigger than my stomach, but everything tasted so good!

Breakfast - Part of a nectarine, a small pear, hard boiled egg, handful of almonds, small glass of ABVU.  Calcium supplement & multi-vitamin.
Snack - Carrots, juice.
Lunch - Tuna salad with green bell pepper, lettuce, spinach.  Gatorade, piece of garlic bread.  Small splurge.  Should have brought more food with me, I was hungry.
Dinner - TJ's apricot bar.  Salad with lettuce, spinach, garbanzo beans, tomato, cucumber, beets, balsamic vinaigrette, apply cider vinegar.
Snack - TJ's 100% grape juice, 1/2 orange.

Birthday

Happy Birthday to me!
Breakfast - Banana, egg.  Calcium supplement & multi-vitamin.
Snacks - Carrots, orange.
Lunch - Salad with garbanzo beans, tomato, broccoli, spinach, lettuce, balsamin vinaigrette, apple cider vinegar.
Exercise - 60 min on stationary bike.  Weight lifting which included squats, calf raises, obliques, arms.
Dinner - Went to La Fiesta with my best friend.  Salad with lettuce, beef, pinto beans, tomato, avocado, onions, salsa, a little sour cream.  A few chips with salsa.  Dessert at Dairy Queen with parents - definitely a splurge.  Mini blizzard with oreo and cookie dough pieces.

Dinner - Salad with lettuce, carrots, red bell pepper, black olives, kosher beef frank.  Grapes.  Pigged out on moosetracks icecream.  Shouldn't have.
Exercise - 40 min on stationary bike.  Weight lifting including lunges, ball crunches, bicep curls, etc.

Breakfast - Smoothie with 1/2 cup ABVU, 1/2 scoop whey protein, peach, strawberries.  Coconut jam muffin.  Calcium supplement & multi-vitamin.
Snacks - Handful of almonds, celery, apple.
Lunch - Salad with spinach, tomato, broccoli, sliced beets, hard boiled egg.  Piece of fruit covered angel food cake.  A splurge in the teacher's room - couldn't resist.
Didn't get to exercise today.  Promised myself I wouldn't bring work home, but that meant I had to stay extra late.
Dinner - Early birthday dinner with my husband.  Went to Buca di Beppo.  Sourdough bread, chicken breast stuffed with ham and cheese, broccoli with garlic, shared birthday brownie with a scoop of ice cream.  Definitely splurged, but it's a birthday celebration right?

Dinner - Hungry after work, stopped by Raley's Grocery.  Chicken fajita salad with tomatoes, pepper, onion.  Mixed raw veggies.
Exercise - 35 min on stationary bike.  Weight lifting including squats, tricep work, ball crunches, etc.
Snack - Brown rice cake.  Chips and bean dip.  Splurged on starches tonight.  Was CRAVING salt.

Lunch - Zucchini Potato Casserole (see photo).
Snack - Carrots, brown rice cake.
Dinner - With family.  BBQ turkey, pork, peppers, onion, zucchini.  Salad with lettuce, tomato, carrots.  Piece of chocolate cake with peanut butter frosting.  An indulgence for sure, hopefully one that won't affect my sleep.

Breakfast - Home grown peach, handful of roasted almonds, GF donut muffin, juice.  Calcium supplement & multi-vitamin.
GF Donut Muffin Recipe: Mix 1/4 cup sugar, 1/8 cup canola oil, 1/2 tsp nutmeg.  Add 1/4 cup ABVU, 1/4 cup brown rice flour, 1/4 cup potato starch, 1/2 tsp zantham gum, 1/2 tsp baking powder.  Spoon into 4 lined muffin cups.  Sprinkle with cinnamon and sugar.  Bake at 375 for 18 - 20 min.
Exercise - 50 min on stationary bike.  3x10 lunges w/ 15 lbs, 3x20 ball crunches, 3x10 bicep curls w/ 15 lbs, 3x10 full pushups.
Lunch - Gatorade.  2 egg farmer's casserole with spinach, broccoli, homegrown tomato, green bell pepper, onion, minced garlic, salsa.
Snack - Brown rice cake, apple, juice.
Dinner - With friends.  Tarragon chicken, broiled red potatos.  Green beans, onions, mushrooms sauteed in wine.  Flourless chocolate cake.

Snack - McDonald's Dollar Menu Side Salad, small orange juice.  Was hungry and thought of a decent roadside snack.
Dinner - Tuna salad with celery, green bell pepper, onion, tomato, spinach.  Handful of Snyder's Honey Mustard Pretzel Pieces.  Gave in to my salty craving.  Popcorn while watching "Bones."

Relief

A little relief... Thanks to generic Nyquil I was able to sleep through the night.  I am still dragging, but better than I would have been.
Breakfast - Banana, coconut apricot jam muffin, apple juice.  Calcium supplement & mutli-vitamin.
Snacks - Pear, celery with natural peanut butter.
Lunch - Gatorade, hard boiled egg.  Salad with spinach, tomato, carrots, broccoli, cucumber.
Exercise - 35 min on stationary bike.  Too tired for anything else.  I listened to my exhausted body.
Snack - Brown rice cake, apple juice.
Dinner - Went to Denny's with family and I must admit, splurged.  Lemonade, dinner roll.  Chipotle chicken breast with 2 strips of bacon, corn, raw veggies.  Scoop of vanilla ice cream with caramel sauce.

Pretty much had insomnia for a week.  It's taking it's toll.  My adrenaline is running out and I'm on E.
Breakfast - TJ's blueberry juice, hard boiled egg, peach, coconut jam muffin.  Calcium supplement & multi-vitamin.
Snack - Starbuck's Chai Soy Latte.  Another bad night, I gave in to caffeine.
Lunch - Raisins, small glass of ABOU.  Salad with kidney beans, tomato, cucumber, onion, spinach, balsamic vinegar and apple cider vinegar.
Exercise - 40 min on stationary bike.  Abs/arms/legs weight lifting.
Dinner - Gatorade, carrots.  Salmon salad with spinach (tuna salad recipe with TJ's canned salmon).  Popcorn.

Dinner - Picked up dinner in between work events at Raley's Grocery.  Chicken fajita salad and mixed raw veggies.  Sobe 0 calorie drink.

Lunch - Salad with kidney beans, tomato, cucumber, onion, spinach, apple cider vinegar, balsamic vinegar.
Dinner - Farmer's egg casserole with tomato, spinach, onion, green bell pepper, yukon potato, salsa, garlic, seasoned salt, pepper.  Carrots, coconut jam muffin.
Exercise - 30 min on stationary bike.  3x20 push-ups, obliques.  3x10 squats w/ 15 lbs.  3x20 calf raises, 3x10 shoulder lifts w/ 10lbs.
Dessert - Mini coconut frozen yogurt from Pinkberry.  Didn't need that, but on a hot night it felt good.

Dinner - Salad with lettuce, broccoli, red bell pepper, red onion, garbanzo beans, beets, bacon, BBQ chicken.  Glass of ABOU.

Dinner - Went to the Auburn Alehouse with the husband.  Grilled chicken breast and thigh, grilled veggies, garlic mashed potatoes.

Snack - Raisins, Gatorade.
Lunch - Cucumber, tomato, cualiflower, and kidney beans tossed with apple cider vinegar and balsamic vinegar over spinach and cabbage.  Macadamia nut cookie.  Darn being back at work where treats are available!
Snack - Brown rice cake, glass of ABOU.
Dinner - Had dinner with dad at Coco's.  Small steak with grilled asparagus, black beans, salsa, and one small piece of bread.
Exercise - 20 min walk.
Dessert - Went to Pinkberry, a new frozen yogurt place.  Small serving of coconut and chocolate frozen yogurt.

Breakfast - Hard boiled egg.  Smoothie with 3/4 cup ABOU, 1/2 scoop whey protein, 1 tbsp cocoa powder, peach, 1/2 banana.
Snack - Gatorade, carrots.
Lunch - Went to a cafe with the music team.  Grilled chicken breast topped with salsa.  Salad with mixed lettuce, tomato, cucumber, avocado.
Exercise - Noticed a big bruise on my already sore knee, decided to bike instead of run.  30 min on stationary bike.  6x10 jumping squats, push-ups, ball crunches.
Dinner - Pineapple juice.  Curried egg salad with spinach, cabbage, yellow squash, cauliflower, green bell pepper.  Brown rice cake.

Lunch - PTC catered lunch.  Lemonade, assorted fruit (watermelon, cantaloupe, strawberries), cucumber & red onions.  Taco salad with lettuce, ground turkey, tomato, celery, kidney beans, a little cheese, a little dressing.
Exercise - 20 min on stationary bike.  3 x 60 sec planks, chest and arm weights.
Snack - Gatorade, apple.
Dinner - Grilled tilapia with sea salt, pepper, lemon juice.  Salad with cabbage, yellow squash, cauliflower, carrots, pickle relish.  TJ's 100% cranberry juice.  Brown rice cake.

Last day of freedom.  The school year begins tomorrow.  How am I going to spend this last day?  Doing things I won't have time for later on... baking wheat bread from scratch (for my husband), spending a long time at the gym, cooking a tasty dinner for the two of us.
Breakfast - Banana, slice of lean turkey, juice.  Calcium supplement & multi-vitamin.
Lunch - Hard boiled egg, handful of almonds.  Salad with cabbage, tomato, cauliflower, carrots, a little TJ's goddess dressing.  TJ's 100% cranberry juice.  Tiny piece of homemade wheat bread.
Exercise - 45 min on stationary bike.  3x10 walking lunges w/ 12 lbs.  3x20 ball crunches and push-ups.
Dinner - Shredded chicken with TJ's BBQ sauce and chopped onion over spinach.  Steamed yellow squash.  1 scoop cookie dough ice cream.

Lunch - Hard boiled egg, handful of peanuts.  Salad with spinach, cabbage, tomato, broccoli, cauliflower, carrots, pickle relish.
Snack - Raisins, gatorade, 1/2 grapefruit cranberry muffin (wheat version of orange cranberry muffin - see GF recipes).
Exercise - 20 min treadmill. Weight lifting including 3x10 squats w/ 18 lbs, 3x12 calf raises, 3x20 obliques, 3x12 bicep curls w/ 12.5 lbs, etc.  10 min stationary bike.
Dinner - TJ's chipotle flat iron steak, mixed veggies, 1 pepper and olive roll-up.  TJ's 100% cranberry juice.  Popcorn.

Food Diary for Sunday 8/15
Breakfast - Apple, orange juice, large slice of Farmer's Casserole.  Calcium supplement & multi-vitamin.
Farmer's Casserole Recipe: Whisk 4 eggs, a dash of yellow curry powder, and a splash of ABOU.  Chop onion, cauliflower, broccoli, spinach, turkey breast.  Add veggies and meat to eggs.  Pour into greased 1 qt baking dish. Bake at 350 for 40 min until knife inserted in center comes out clean.
Lunch - Tuna salad with broccoli, cauliflower, cabbage, spinach.  Handful of trail mix.
Exercise - 30 min on stationary bike.  3x20 ball crunches and push-ups.
Dinner - Family BD party.  Beef patty with tomato, fresh fruit.  Salad with lettuce, bacon, peas, tomato, creamy dressing.  Too much dairy this weekend!

Breakfast - Banana, slice of lean turkey, gatorade, calcium supplement & multi-vitamin.
Exercise - 8 miles on the trails.  Ate a handful of dried cranberries and roasted peanuts.  Felt good to be running again!  Had an achy knee however.
Snack - Gatorade, apple.
Lunch - Went to Chipotle with parents.  Salad with lettuce, beef, sauteed peppers and onions, corn, salsa, little bit of sour cream and chipotle dressing.  A couple of chips with guacomole.  Iced tea.
Dinner - Homemade marinara suace with ground turkey over spinach and cabbage.  Carrots.  Slice of Rosemary & Pepper Soda Bread. 
Bread Recipe: Combine and whisk 2 cups all purpose flour, 1 1/2 cups whole wheat flour, 1/2 cup quick outs, 2 tbsp rosemary, 1/2 tsp sea salt, 2 tsp baking powder, 1 tsp baking soda, 3/4 tsp black pepper.  In a saucepan melt 1/4 cup butter until browned.  Stir into dry mixture along with 1 3/4 cups ABOU.  Divide dough in half and form into balls.  Place on lightly greased cookie sheet, brush with olive oil and black pepper.  Back for 45 minutes at 375 or until a toothpick comes out clean.
Exercise - 30 min walk around neighborhood.
Dessert - 2 scoops of oreo ice cream.  Wheat bread and ice cream... I may be in trouble tonight.

Food Diary for Friday 8/13
Breakfast - Hard boiled egg, orange, handful of trail mix, calcium supplement & multi-vitamin.
Lunch - Glass of ABVU.  Salad with spinach, cabbage, cucumber, tomato, 1/4 cup garbanzo beans, onion, 1 tsp apple cider vinegar, 1 tsp balsamic vinegar.
Snack - 2 brown rice cakes, orange juice.
Dinner - Scrambled eggs with onion, russet potato.  Fresh garden tomato, avocado slices.  Small piece of coconut orange cake.  AMAZING  GF cake recipe!!!  So sweet and tasty.
Coconut Orange Cake Recipe: Whisk 6 eggs, 1/4 cup orange puree, 6 tbsps honey, 1 tsp vanilla extract, zest from one orange, 1/4 cup softened butter.  Combine 1/2 cup coconut flour, 1 tsp baking powder, dash of sea salt.  Combine wet and dry ingredients.  Pour into greased 8x8 pan.  Bake at 350 for 30 - 40 minutes until lightly browned and toothpick comes out clean.  When cool, frost with your favorite vanilla frosting.

Breakfast - Smoothie with 3/4 cup ABVU, 1/2 cup frozen blackberries, 3 fresh figs, 1/2 scoop whey protein powder.  Calcium supplement & multi-vitamin.
Snack - Handful of trail mix (cranberries/raisins/mixed nuts).
Lunch - Slice of lean turkey breast, brown rice cake.  Raw broccoli, cauliflower, carrots with TJ's goddess dressing.
Exercise - 35 min on treadmill, avg pace 5.3 mi/hr.  Abs/arms/legs weight lifting.  Did I mention that it feels good to lift with my legs again?
Snack - Apple, gatorade.
Dinner - Fulfilled my occasional Mexican food craving with my best friend.  Margarita, chips and salsa, shredded chicken taco, grilled veggies.  1 scoop caramel praline frozen yogurt.

Exercise - 30 min on stationary bike.  3x20 push-ups, ball crunches.  3x10 squats, 3x20 obliques.
Lunch - Salad with spinach, cucumber, tomato, 1/4 cup garbanzo beans, onion, 1 tsp apple cider vinegar, 1 tsp balsamic vinegar.  Hooked on this salad this week.  A good way to use up lots of fresh tomatoes and cucumber.
Snack - Nectarine, orange juice.
Dinner - BBQ beef strips, steamed broccoli and cauliflower.  V8 juice.  Glass of white wine.

Report for 8/10

Food & Exercise Diary for Tuesday 8/10
Breakfast - Hard boiled egg, 1/2 large grapefruit.  Calcium supplement & multi-vitamin.
Exercise - 35 min on treadmill.  Mostly walking, running was interrupted by an upset stomach.  Ugh.
Lunch - Salad with spinach, cucumber, tomato, 1/4 cup garbanzo beans, onion, 1 tsp apple cider vinegar, 1 tsp balsamic vinegar. Coconut strawberry jam muffin.
Snack - Handful of trail mix (cranberry/raisin/mixed nuts).
Dinner - Tuna salad over spinach, green bell pepper, broccoli.  Box of raisins, 2 slices of GF Apple Oat Quick Bread.  The bread was an experiment that has potential, but I will have to refine.  Gees I must really be starving for carbs recently because I have MASSIVE cravings for them.  It may also be my denial that work is starting again soon and that means I will have less time to cook.  I have been freezing some of the baked goods, suaces, etc that I've been making and now I wonder if I am subconsciously "stocking up" for leaner times.

Food & Exercise Diary for Monday 8/9
Breakfast - Iced tea, 1/2 apple, coconut strawberry jam muffin.  Calcium supplement & multi-vitamin.
Coconut Strawberry Jam Muffin Recipe: Combine 3 eggs, 5 tbsp strawberry jam, 1 tbsp canola oil.  Add 1/4 cup plus 1 tbsp coconut flour, 1/2 tsp baking powder, 1/4 cup coconut flakes.  Bake at 375 for 16-18 min.
Lunch - Iced tea.  Homemade marinara sauce with ground turkey over spinach.
Marinara Sauce Recipe: Puree tomatoes with skin to equal 3.5 cups.  In a medium pot saute 1/2 cup diced onion, 3 cloves minced garlic, 1 tbsp olive oil.  Add tomatoes, 6 oz can tomato paste, 4 tbsp parsley, 1 tbsp oregano, 1/2 tsp red pepper flakes, 1/2 tsp black pepper, pinch of salt, 1/2 cup dry white wine.  Simmer for 30 minutes, stirring occasionally.
Exercise - 30 min abs/arms/legs weight lifting, stretching.  Felt so good to put some real weight on the legs again.
Dinner - Glass of ABVU.  Salad with spinach, cucumber, tomato, 1/4 cup garbanzo beans, onion, 1 tsp apple cider vinegar, 1 tsp balsamic vinegar.  Yummy!  Coconut strawberry jam muffin.
Dessert - Binged a little later in the evening.  Had a small slice of apple spice cake, a piece of cornbread.

Exercise - 40 min on treadmill, avg pace 5.3 mi/hr.  3x20 push-ups and ball crunches.
Dinner - Husband and I treated ourselves to a dinner out @ PF Chang's China Bistro.  1 spring roll, dynamite shrimp, shanghai cucumbers.

Hangover

Food Diary for Saturday 8/7
Why, why, why?  Binging on wine and food I don't normally eat (gluten-filled crackers and cheese) doesn't lead to a pleasant morning.
Breakfast - V8 juice, hard boiled egg, part of an apple, GF blueberry breakfast bar.  Didn't feel like eating, but forced some food and drink down to help alleviate the symptoms of gluttony. 
Lunch - Iced tea, hard boiled egg, applesauce, brown rice cake.  Calcium supplement & multi-vitamin.  Again didn't feel like eating.  Chose simple foods.
Snack - Celery and carrots.
Dinner - BBQ chicken breast.  Salad with lettuce, spinach, tomato, cucumber, yellow squash, carrots.  Iced tea, small piece of GF apple spice cake.

Lunch - Broccoli and carrots with TJ's goddess dressing.  In-N-Out "Protein Style" Hamburger (beef patty, onions, tomato, special sauce wrappedin iceberg lettuce).  Iced tea.
Snack - Starbucks non-fat green tea frapp.
Dinner - Wedding reception.  Chicken, salad, fresh fruit, strawberries and chocolate.
Dessert - Went to a friend's house and totally indulged.  Wine, cheese and crackers, chocolate.

Dinner - Salad with spinach, cucumber, tomato, broccoli, green bell pepper, pickle relish.  Pink lemonade, pressed fruit bar.

Body Stats
Weight - 99 lbs
BMI - 18.1
Weight is up slightly from the post-marathon period.  Not surprising for several reasons.

Dinner - Jamaican Jerk Chicken Tenders, baked zucchini.  Couple of dried banana chips for dessert.
Exercise - 35 minutes full body weightlifting, light on the legs.

I vow a return to normalcy!  I have been eating too much (by giving myself vacation/gluten free excuses) and not exercising enough.  I need to start running again.  I will feel better, I know it!

Mt. Lassen

Food & Exercise Diary for Tuesday 8/3
Breakfast - Hard boiled egg, cantaloupe, Sobe Green Tea.
Lunch - Handful of almonds, hard boiled egg, apple, brown rice cake.
Exercise - 3 mile hike in Mt. Lassen National Park.  Unique volcanic scenery.  First feet-impact-based aerobic activity since the marathon.  My legs managed well, just the tiniest of occasional aches.
Snack - V8 juice, dried apricots.
Dinner - Ate at Smokin' Mo's, a fine Chico establishment.  Chopped BBQ Chicken Salad with lettuce, jicama, corn, black beans, avocado, BBQ sauce.  Glass of white zin.
Dessert - A mini original/chocolate frozen yogurt twist from Pinkberry.  A definite splurge.

Breakfast - Smoothie with Yoplait Raspberry Yogurt, 1/2 scoop whey protein, frozen blackberries.  Apple.  Calcium supplement & multi-vitamin.  Yogurt's not paleo but we're going out of town and we don't have much in the fridge.
Lunch - Cytomax.  Carrpts & broccoli with TJ's goddess dressing.  1 small slice of GF zucchini bread.
Snack - Pretzels
Dinner - Brother cooked me dinner.  Little bit of steak, 2 bacon pieces, brussel sprouts, red potatoes, onions.  Piece of GF zucchini bread.

Body Stats
Brother tested my body fat percentage in the "Bod Pod."  It was rated as 12%.  Error percentage between 2 - 4%.  Pretty good!

Breakfast - Banana, hard boiled egg, purple muffin.  Calcium supplement & multi-vitamin.
Linch - Joint Juice, Apple.  Carrots & broccoli with TJ's goddess dressing.  2 brown rice cakes.  Not paleo, but was craving something salty and light.  Not much in the cupboards or fridge.
Exercise - 3x18 push ups & crunches. 
Dinner - 100% grape juice, grilled turkey breast and a slice of beef brisket, grilled veggies.   Slice of Gluten Free Fresh Apple Streusel Pecan Cake, recipe adapted from http://www.bettycrocker.com/
Recipe: In small bowl mix streusel topping - 2/3 cup quick cooking oats, 1/3 cup packed brown sugar, 1 cup chopped pecans, 3 tbsp canola oil.  In large bowl beat 1 cup sugar, 6 oz Yoplait Greek Fat Free honey vanilla yogurt, 1/3 cup applesauce, 1/3 cup canola oil, 1 tsp vanilla, 2 eggs.  Add 3 cups gluten free baking mix (rice/potato/tapioca), 3 tsp baking powder, 1 tsp cinnamon, 1 tsp nutmeg, 2 cups finely chopped apples.  Spread batter in greased 13x9 pan.  Sprinkle with topping.  Bake 35 - 45 min in a 350 oven until toothpick comes out clean.  *Today I cut the recipe in half.  Didn't have any eggs or yogurt so substituted mayo and sour cream.  Will use eggs and yogurt when I make it for my Grandma's birthday party next weekend.

While reading "Runner's World Magazine" this morning, I came across an ad for the "Great Prostate Cancer Challenge National Race Series."  My grandpa was recently diagnosed with prostate cancer and is undergoing treatment.  I instantly wanted to get involved, but there aren't any races in California.  The closest race is in New Mexico.  Hmm... project idea?!?  I've sent some emails for more information.  We'll see where this leads.

Breakfast - Banana, hard boiled egg, 1 Purple Muffin Majesty.  Calcium & iron supplements, multi-vitamin.
Purple Muffin Majesty Recipe: Cream 1 egg, 1/6 cup sugar, 1/6 cup honey, 2 tbsp soft butter, 2 tbsp applesauce.  Mix in 1 cup GF flour mix, 1 tsp baking powder, 1/3 - 1/2 pureed blackberries, 1/4 cup chopped pecans.  Spoon into 6 muffin cups.  Top with sugar if desired.  Bake at 350 for 18-22 min until toothpick comes out clean.
Lunch - Family birthday BBQ.  Hamburger patty, veggie salad, small serving of baked beans, fresh pineapple.
Exercise - 20 mins on stationary bike, stretching.
Dinner - Carrots.  Turkey marinara sauce with peppers and zucchini over lettuce.  Glass of red wine, couple pieces of dark chocolate.  After dinner, went to a bar to see a friend's band.  Danced to fun cover band tunes.  Ordered 2 cranberry vodka mixes.  Did I mention that I've been kind of letting myself go this week?  Slightly deserved, just can't go overboard.

Exercise - 40 min racquetball, 15 min stationary biking, stretching.
Lunch - 1 cup butternut squash soup, raw carrots and broccoli with TJ's goddess dressing.
Snack - Couple of peanut butter pretzels from TJ's.  A tiny splurge.  I just LOVE peanut butter.
Dinner - Tuna salad with spinach and lettuce.  Cantaloupe, 1 coconut butter cookie.  Another little splurge.  Think I'm trying to "make up" for lost weight during marathon training or something.  Okay for a few small indulgences, but let's not get carried away!
Tuna Salad Recipe: Drain 1 can tuna.  Dice celery and green bell pepper.  Combine with 2 tbsp TJ's sweet pickle relish, 1/2 tbsp parsley, 1 tsp dill weed, 1/2 tsp minced garlic, 1/2 tsp yellow curry powder, 1/2 tsp onion powder, olive oil based mayonnaise to taste.  Serve on bread or over lettuce.  See photo - sorry, it uploaded sideways.

The Fair Challenge

Exercise - 30 min on stationary bike, low-med resistance.  Stretched/foam roller.
Lunch - Went to the Cheesecake Factory with some girlfriends.  BBQ chicken salad with romaine, avocado, tomato, corn, black beans, cucumber, a little ranch dressing.
Snack - V8 Juice
Went to the CA State Fair with my husband.  Did my best to enjoy myself, but also eat "fairly" healthy.
Dinner - Margarita, 1/2 BBQ chicken, corn on the cob, soft-serve ice cream cone.

Snacks - Orange, V8 juice, lemonade.
Dinner - Baked red potato topped with homemade chili, steamed broccoli, a little salsa and sour cream.  Small glass of wine, small bowl of popcorn.
Homemade Chili Recipe: 1/2 lb lean ground turkey, 1 can chili beans with sauce, 1 small chopped red onion, 1 chopped green bell pepper, 1/2 drained canned corn, 4 oz tomato sauce, chili powder and cumin to taste.

I woke up sore, stiff, and HUNGRY!
Breakfast - Banana, hard boiled egg, V8 juice.  Calcium supplement & multi-vitamin.
Exercise - 20 easy min on the stationary bike, lots of stretching, used the foam roller.  Drank some gatorade.
Lunch - V8 juice, cup of turkey/bean chili.  Salad with lettuce, broccoli, tomato, cucumber, home made salsa.
Snack - Celery with peanut butter.
Dinner - Iced tea, TJ's butternut squash soup, baked brussel sprouts, a couple of gluten free crackers.
Exercise - Walked to a local restaurant.
Dessert - 1/2 German chocolate pie slice from Marie Callendars.

Post Marathon Body Stats
Weight - 97.5 lbs
BMI - 17.8
Chest - 32"
Waist - 24.5"
Hips - 32.75"
Lost 1 lb, everything else is the same.  Expect that most weight loss is water weight and I should gain it back quickly.  Doing my best to stay hydrated as I recuperate.

San Francisco Marathon

Chip Time - 4:49:41
Avg Pace - 11:03 min/mi
Gun Time - 5:58:50 (I started in the 7th wave, over 1 hr after the elites)
Overall Place - 3978/5950

This represents a personal record!  I beat my CIM time by 8 minutes!  I had an incredible and unique experience.  At mile 2, my knee completely locked up and become extremely painful.  After stretching I decided to run through the pain; fortunately as the muscles warmed up, they released.  I powered up the hills before the Golden Gate Bridge with a burst of strength and enjoyed the majestic scenery.  I have never enjoyed the beauty of Battery Park, the Presidio, or Golden Gate Park before.  WOW!  The return through Haight-Ashbury and a variety of neighborhoods brought out a number of local residents to cheer us on.  I picked up my speed at mile 16, running 9:30/mi, surpassing my goals.  When I came upon the 24 mile marker and realized not only was I going to finish strong but set a personal record, I couldn't stop the tears.  That runner's high, that catharsis, is why I love to run. 

Post Race Snack - Cytomax, orange, trail mix (raisins/cranberries/mixed nuts/banana chips)
Lunch - Went to a taqueria.  Chicken taco with lettuce, salsa, guacamole, a little sour cream, cilantro.  A few chips and salsa.
Dinner - Pork tenderloin medallions, grilled veggies.  Salad with lettuce, cabbage, carrots, cauliflower, salsa.  Cranberry juice.

Dinner - San Francisco Cheesecake Factory!!!  Had chicken medallions, sauteed veggies, white rice, a slice of bread.  Protein and carb loading for the race!

Breakfast - 2 scrambled eggs, apple, V8 juice.  Calcium supplement & multi-vitamin.  One chocolate orange muffin.  A splurge.  Made them for my husband (a frequent excuse to taste something sweet).
Chocolate Orange Muffin Recipe: Cream 1/2 cup butter, 2/3 cup sugar, 2 eggs, and zest from whole orange peel. Alternately add gluten free baking mix (brown rice flour/potato starch/tapioca flour/zanthan gum), 3/4 cup pureed orange, 2 tsp baking powder, and 8 tbsp cocoa powder. Spoon into lined muffin cups. Bake at 350 for 18 - 22 min.  *Can be made with all purpose/wheat flour. 
Lunch - Gatorade, cantaloupe.  Small salad with lettuce, 1/4 sausage, tomato, cucumber.
Dinner - Iced tea, BBQ London Broil, baked brussel sprouts, 1/2 golden potato, 2 small potato rolls.  Starches included for pre-marathon fueling.
Beef Marinade Recipe: 1/2 cup low sodium soy sauce, 2 tbsp V8 juice, 1 tbsp olive oil, 1 tbsp lemon juice, 1 1/2 tsp minced garlic, 1 tsp oregano, 1 tsp black pepper.

Lunch - Apple juice, 1/2 whole wheat & oat waffle.  A splurge - a taste of the breakfast I made for my husband.  Salad with spinach, lettuce, 1/4 sausage, tomato, broccoli, bell pepper, onion, corn.
Exercise - 15 min on treadmill, 10 min on stationary bike, 3x18 push-ups & ball crunches, 3x10 curls & overhead presses with 10 lbs.  Very nervous about the marathon.  Not sure my knee is up for it.
Snack - Gatorade, small homegrown peach, couple of cherries.
Dinner - Apple juice, cantaloupe, curry turkey salad over lettuce.  Starbucks green tea tall frapp.  Another splurge, this time while chatting with a girl friend.

Food & Exercise Diary
Breakfast - Apple, handful of trail mix (mixed nuts/cranberries/dark chocolate).  Calcium supplement & multi-vitamin.  1 small sweet roll.  Tried to make a sweet roll recipe for my husband's pre-interview breakfast, but they didn't turn out too well.  Need to ask my mom for the family recipe, the book version had good flavor, but poor texture.
Lunch - Gatorade.  Salad with spinach, turkey breast, broccoli, celery, cucumber, tomato.  Curry dressing made with yellow curry, ground pepper, a little olive oil mayonnaise.  One orange cranberry muffin.  Another splurge.  The "eating well" part of my pre-marathon week isn't going so well.  Need to shape up or my digestive system may revolt!
Dinner - 2 chicken tenderloins seasoned with dijon mustard, lemon juice, basil and oregano.  Salad with iceberg lettuce (I was craving the watery crunch), tomato, cucumber, celery, a little balsamic vinaigrette.

Exercise - 40 min on stationary bike, lots of stretching.  Getting in an aerobic workout without stressing my knee.
Snack - V8 juice, couple of cherries.
Dinner - Iced tea, cantaloupe.  Tilapia fillet seasoned with parsley, minced garlic, sea salt, pepper.  GF dill biscuit.
GF Dill Biscuit Recipe: Mix 1 cup GF flour mix (1/2 brown rice flour, 1/4 potato starch, 1/4 tapioca flour), 1 1/3 tsp baking powder, 1/4 tsp cream of tartar, 1/2 tsp parsley, 1/2 tsp dill weed, 1/2 tsp onion powder, 1/4 tsp garlic powder, dash of salt.  Cut in 1/4 cup butter until crumbly.  Stir in 1/6 cup light sour cream and 1/6 cup water.  Knead until dough stays together.  Divide into 4 parts and shape as desired.  Sprinkle with Parmesan cheese.  Bake at 450 for 11 min until lightly browned.
Dessert - DQ small chocolate sundae.  Definitely a splurge, and one that upset my stomach.  I should know better.

Breakfast - Slice of lean turkey, apple, cranberry juice, calcium supplement & multi-vitamin.
Exercise - 30 min on the treadmill, avg pace 5.3 mi/hr.  3x18 push-ups and crunches.
Lunch - V8 juice, small homegrown peach.  Salad with lettuce, broccoli, cucumber, celery, homegrown tomato, carrots, salsa.  1 piece beef jerky.
Snack - Gatorade Trying to increase hydration.
Dinner - 2 chicken breast tenders with stir fry sauce over lettuce.  Cantaloupe.

Countdown: 7 Days

Food Diary for Sunday 7/18
7 days until the San Francisco Marathon!  I watched the course map video last night with family.  If I am healthy, it's going to be an AWESOME experience.
Breakfast - Grapefruit, slice of lean turkey breast, handful of trail mix (cranberries/mixed nuts/dark chocolate).  Calcium & iron supplement, multi-vitamin.
Lunch - V8 juice, cranberry juice, apple.  Two scrambled eggs with cucumber, broccoli, red onion, minced garlic, and chipotle seasoning served over spinach.
Snack - Cherry jam cupcake.  Was my first attempt at making dessert for a family dinner; first failed attempt unfortunately.  Can't always trust internet recipes.
Dinner - Beef, grilled veggies (corn/peppers/red onion).  Salad with lettuce, tomato, carrots.  Cranberry juice.  Small slice of vanilla/chocolate marble cake with fresh berries. 

I have told myself that I will eat/sleep/hydrate very carefully this week.  Think today was my "eat merrily before the health food nut side of me kicks in."

Food & Exercise Diary for Saturday 7/17
Our camping trip was cancelled last minute.  Sometimes life throws you lemons and we weren't making lemonade.  Needed to slow down and start the blender.
Breakfast - V8 juice, banana, 2 slices of ham, handful of trail mix (cranberries/mixed nuts/dark chocolate), calcium supplement & multi-vitamin.
Exercise - Ran 9.23 miles on the trails, burned 780 calories, consumed 1/2 Hammer Gel.  Knee still a little sore, but got better as the run went on.  Stretched out very carefully.
Lunch - V8 juice, gatorade, carrots, orange cranberry GF muffin.  Salad with spinach, lettuce, hard boiled egg, broccoli, tomato, cucumber, salsa.
Dinner - Salad with lettuce, corn, black beans, peppers, avocado, salsa, a little sour cream.  Watermelon, glass of wine.  Handful of dried cranberries.

Breakfast - Banana, 2 slices of ham, glass of ABVU, calcium supplement & multi-vitamin.
Snack - Orange juice and trail mix (cranberries/mixed nuts/dark chocolate pieces).
Lunch - Gluten free orange cranberry muffin.  Salad with spinach, lettuce, hard boiled egg, broccoli, tomato, cucumber, red onion, salsa.  Glass of ABVU.
Orange Cranberry Muffin (Gluten Free) Recipe: Cream 1/2 cup butter, 2/3 cup sugar, and 2 eggs.  Alternately add gluten free baking mix (brown rice flour/potato starch/tapioca flour/zanthan gum), 3/4 cup pureed orange, 2 tsp baking powder.  Mix in 1 cup dried cranberries.  Spoon into lined muffin cups.  Bake at 350 for 18 - 20 min.  Not sure why the picture turned sideways when uplaoded.  Oh well.

Going camping with friends this weekend.  One of them follows a gluten free diet.  Will do my best to remain paleo and complete my assigned 8 mile run on part of the Western States Trail.  Hope my knee/feet behave!

Lunch - Ate at Habit Burger Grill with a friend.  Iced tea.  Salad with lettuce, tomato, avocado, bacon, egg, chicken.
Exercise - 30 min on the treadmill, 15 min on the bike.  My knee is still aching.  This is NOT looking good.
Dinner - Hard boiled egg.  Salad with spinach, lettuce, chicken, cucumber, broccoli, red onion.  Glass of wine.

Breakfast - Grapefruit, 2 slices of ham, calcium supplement & multi-vitamin.
Lunch - Glass of ABVU.  Salad with spinach, lettuce, tomato, carrots, green bell pepper, red onion, sunflower seeds, salsa.  Piece of homemade masa cornbread.  I have lots of leftover masa from our pupusa experiments.  Wanted to create a use for it outside of tomale, tortilla, or pupusa recipes.
Homemade Masa Cornbread Recipe: 1/2 cup all purpose flour, 1/2 cup whole wheat flour, 1 cup masa, 1 tbsp sugar, 2 tsp baking powder, 1 tsp baking soda, dash of salt.  1 egg, 1 tbsp canola oil, 1 1/2 cup milk.  Mix dry and wet ingredients, combine.  Bake at 400 for 20 min in greased 8" glassware.
Exercise - 20 min weight lifting, abs/arms.
Snack - Celery with peanut butter, a couple of roasted peanuts, orange juice.
Dinner - Veggie chili, carrots, glass of wine.
Veggie Chili Recipe: Combine all ingredients in crock pot.  Rinse/drain 1 can black beans and 1 can garbanzo beans.  Add 1 can black refried beans, 1 can diced tomatoes in puree, 1 can drained corn.  Add chopped celery, red onion, and bell pepper.  Spice with 2 cloves minced garlic, tbsp each of chili powder, oregano, parsley, and basil. Cook on high for 2 hours.

Think I was afraid to take measurements after the vacation, since we ate and drank so indulgently; however, I have to consider that we were fairly active, so anyways, I waited a week.  Turns out I have stayed the same.  Good deal I suppose!

Exercise - 3x16 push ups and crunches, 45 min on treadmill.  Feet/knee felt better, still a little sore.  Spent lots of time stretching.
Lunch - Gatorade.  Curried egg salad with spinach, lettuce, broccoli, green bell pepper.  Choco-oatmeal-banana-peanut muffin.
Snack - V8 juice, celery with peanut butter.
Dinner - 2 chicken breast tenderloins in BBQ/salsa mix, over red onions and spinach.  Handful of roasted peanuts, small glass of wine.

Of course after yesterday's decadence, my stomach is a mess this morning.  Simple foods needed today.  That will be a challenge at lunch - family celebrating with us at a Mexican restaurant.
Breakfast - Apple, applesauce, iced tea, calcium supplement & multi-vitamin.
Exercise - 10 min treadmill, 30 min stationary bike.  Meant to run 40 min but experienced knee pain, chose low-impact biking.
Lunch - Chicken breast topped with salsa, grilled zucchini, yellow squash, red bell pepper.  Iced tea.  Had lunch at On the Border with family.
Dinner - Carrots.  Salad with spinach, lettuce, 1/2 spicy mango chicken sausage, broccoli, celery.

Happy Anniversary!

Happy 1st Anniversary to my husband and I!!!
Breakfast - Banana, glass of ABVU, a few roasted peanuts, calcium supplement & multi-vitamin.
Lunch - 2 scrambled eggs with yukon potato, spinach, green pepper, red onion, garlic, salsa.  2 choco-oatmeal-banana-peanut muffins.  It is a holiday after all...
MLB Game Snacks - Handful of peanuts, raw veggies.
Dinner - Celebrated our anniversary at Macaroni Grill.  Glass of chianti, bread, beef skewers with grilled veggies.  Continued our celebration at Rick's Dessert Diner in Sacramento.  1/2 slice mint chocolate cake, scoop of vanilla ice cream.  TOTALLY decadent, but afterall, it is our 1st anniversary.

Breakfast - Banana, couple thin deli turkey breast slices, gatorade, calcium supplement & multi-vitamin.
Exercise - 12 miles at a relaxed pace, burned 1000 calories.  My first ran after vacation and the 2nd degree sunburn.  Went fairly well.  Might have been slightly compensating, my knee was aching by the end.
Snack - Glass of ABVU, apple.
Lunch - Salad with spinach, lettuce, broccoli, celery, tomato, red onion, salsa.  A couple of shelled peanuts, gatorade.
Snack - Carrots
Dinner - Salmon fillet broiled with salt and pepper placed on top of red onions and spinach, drizzled with balsamic vinegar/honey.  Steamed broccoli, glass of wine.  Went to a friend's birthday party and drank a wine cooler.

Dinner - Chicken stir fry with mixed veggies, a bit of brown rice, and romaine lettuce.

Happy Birthday brother and gramma!
Breakfast - Grapefruit, couple thin deli slices of turkey, small glass ABVU, calcium supplement & multi-vitamin.
Lunch - Went to Karma Cafe with a friend.  Had a Mediterranean salad with romaine lettuce, kalamata olives, cucumber, tomato, a little yogurt dressing.  Chai tea latte.
Exercise - 60 min on stationary bike.
Snack - Apple
Dinner - Burger Salad: spinach, lettuce, beef burger patty w/ chipotle seasoning, tomato, red onion, red/green bell pepper, corn, salsa.  Handful of corn tortilla chip remnants, glass of wine.

Sometimes the strangest urges take hold of me.  At 10 PM I decided to bake a treat inspired by my husband.  I call it Oatmeal Molasses Beer Bread.  Turned out pretty tasty.  Recipe: Mix dry ingredients together - 1 cup quick oats, 1 cup all purpose flour, 1 cup whole wheat flour, 1 tsp baking powder, 1 tsp baking soda.  Mix wet ingredients together - 1 cup beer, 1/2 cup molasses, 1 tbsp canola oil.  Mix wet and dry ingredients.  Pour into greased/floured bread pan.  Bake at 350 for 40 minutes, let cool.  Idea for next time - use Guiness Stout (instead of Newcastle Brown Ale) and add chocolate chips/nuts.

Snack - Carrots and gatorade.
Dinner - Salad with spinach, lettuce, 1/2 spicy mango chicken sausage, hard boiled egg, broccoli, red bell pepper, corn.  1 small chocolate cookie.

Exercise - 35 min on stationary bike (can't run yet), light arms/abs weightlifting.
Snack - Handful of almonds and walnuts.
Dinner - Salad with lettuce, beef tri-tip, corn/black bean/pepper mix, tomato, guacamole, salsa.  Piece of dark chocolate with a small glass of wine.

Road Trip Recap

10 days, 2000 miles, 2 hikes, 1 kayak trip, lots of good memories.  My husband and I took a road trip through the southwestern states.  We stayed with family 2 nights, camped 6 nights, and spent our last night in a hotel.  We ate and drank a plenty.  I did my best to remain on the paleo diet, but I wasn't always successful, sometimes intentionally so.  Although it was a wonderful trip, it is nice to be home and I am looking forward to resuming a normal exercise and diet.  Unfortunately I cannot complete the 22 mile run I had scheduled for this weekend.  While in Lake Powell I received 2nd degree sunburns on both feet.  Let's just say swollen, red and blistered feet are painful!  Lesson learned.  Picture from the Grand Canyon at sunset.

Food & Exercise Diary for Saturday, July 3rd
Breakfast - Apple, 1/4 cup trail mix (cranberries/raisins/almonds/hazelnuts/pumpkin seeds), cranberry juice.
Lunch - Salad with spinach, carrots, broccoli, sunflower seeds.  2 grapefruit muffins.  Yeah so much for pure paleo today.  Made breakfast for my husband and indulged myself.
Dinner - TJ's pesto chicken breast, steamed zucchini, small glass of port.
Exercise - Light weight lifting, mostly abs/arms.  Tough to put weight on my burned feet.

Breakfast - Apple, turkey slice, 2 pina colada muffins (I gave in, I couldn't resist), calcium supplement & multi-vitamin.
Exercise - 35 min on treadmill including 1x1600.  Just wasn't feeling it today - no energy.  Took it easy.
Lunch - Salad with spinach, tomato, cucumber, carrots, green bell pepper, sunflower seeds, 1 tbsp basil pesto.  Handful of peanuts, gatorade.
Snack - Baby carrots, a few berries.
Dinner - Taco salad (spinach, grd turkey, corn, black beans, diced tomatoes, pepper, onion, black olives, salsa, a little sour cream).  Cranberry juice, 2 big spoonfuls of chocolate frosting.  I have been absolutely insatiable today, especially when it comes to my sweet tooth.  Really?  Frosting, yeah really.

Happy Father's Day

Food & Exercise Diary for Sunday 6/20
Happy Father's Day.  Happy Food Day I should call it... hello carbs.  Ugh I'm already paying for the tasty goodness.  :)
Breakfast - Banana, 2 pina colada muffins, calcium supplement & multi-vitamin.
Pina Colada Muffin Recipe: Mix 1 cup all purpose flour, 1/2 cup wheat flour, 1/2 cup quick oats, 1/2 cup sugar, 1 tbsp baking powder, 1/2 tsp nutmeg, pinch of salt.  In seperate bowl, beat 1 egg, add 3/4 cup light coconut milk, 1/4 cup melted butter, 1/4 cup pineapple juice, 2 tbsp crushed pineapple, 1 tsp vanilla extract.  Whisk with dry ingredients, add 1/2 cup shredded coconut.  Spoon into greased muffin cups.  Spoon crushed pineapple and brown sugar mix on top (1/4 cup melted butter, 1/4 tsp cinnanmon, 1/3 cup packed brown sugar, 1/2 cup all purpose flour).  Bake at 375 for 30 min.
Lunch - Cranberry apple juice, mixed fruit (berries and cantaloupe), spinach quiche, 2 pork sausage patties, 1/2 serving stuffed french toast.  Should not have splurged on the sausage and french toast - too much after the muffins.
Spinach Quiche Recipe: Whisk 6 eggs, 6 tbsp cooled melted butter, 3/4 cup coconut/almond milk, 1 tsp parsley, 1 tsp minced garlic, 1/2 tsp ground mustard, pinch of black pepper.  Mix in chopped turkey breast, 1/3 red onion, 1/2 green bell pepper, fresh spinach.  Pour into greased 9" round or 13x9" dish.  Bake at 375 for 45 minutes until lightly browned and cooked through.
Exercise - 2 mile walk along the river.
Dinner - Limeade.  Salad with spinach, tomato, broccoli, cucumber, carrots, a little catalina dressing.

Breakfast - Gatorade, banana, hard boiled egg, handful of trail mix (I'm addicted to that stuff), calcium supplement & multi-vitamin.
Exercise - 12 miles on the trails, 11 min/mi avg pace (with walk breaks), burned 1000 calories, had 1 Hammer gel.
Lunch - Went to BJ's with my grandma, was very dissapointed with my meal.  Always hard to get the order right when I ask for something "unusual" like no cheese and dressing on the side.  My cobb salad came with lettuce, tomato, and avocado.  Uh.... meat?  Found a couple of hidden turkey pieces, requested the bacon.  So I eventually ate a... Cobb salad with lettuce, tomato, avocado, bacon, a little turkey, a couple of croutons, a little garlic dressing.  Iced tea.
Snack - Handful of raisins.
Dinner - Taco salad, couple of corn chips. 
Taco Salad Recipe: Brown 1 lb lean ground turkey with bell pepper and red onion, drain oil/fat.  Add 1 can drained corn, 1 can drained black beans, 1 can slightly drained diced tomatos, minced garlic to taste, spices to taste.  Serve over spinach (paleo) or use as taco/nacho ingredient (non-paleo).  Optional - add olives, salsa, sour cream, etc.
Exercise - 2 mile round trip walk to Coldstone.
Dessert - "Like It" ice cream serving @ Coldstone.  Chocolate peanut butter ice cream with roasted almonds and coconut.  Can you say indulgence?  At least I added almonds and coconut versus other sugary sweets.

Dinner - Small glass ABVU, 1/2 acorn squash.  2 chicken breast tenderloins with tomato, orange bell pepper, red onion, TJ's BBQ sauce, TJ's authentic salsa. 1 small chocolate chip cookie.  A small splurge.  I have a sweet tooth.

Exercise - 1.4 mi walk from a store to home.  Bought a new oven today. Being delivered on Saturday.  Hallelujah!  What it will be like to have a reliable oven again.  Woohoo!!!
Dinner - Curried egg salad with broccoli and spinach.  Baby carrots, iron supplement.  1 small chocolate chip cookie, small glass of red wine.  2 small splurges, getting into the summer mood I suppose?

Dinner - Went to Mexican restaurant with a friend for happy hour.  A known (and partially accepted weakness).  Chips and salsa, house margarita, chicken tostada without cheese.

Report for 6/14

Food & Exercise Diary for Monday 6/14
Have an incredibly sore throat - the smoothie was about all I could handle.  Ugh.
Breakfast - Smoothie with 3/4 cup ABVU, 1/2 cup frozen blackberries, 1/2 banana, 1/2 scoop vanilla whey protein powder, 1 tbsp cocoa powder.  Calcium supplement & multi-vitamin.
Exercise - 30 min light weight lifting (legs/abs/arms).
Lunch - V8 juice, 1/2 banana.  Salad with homemade balsamic vinaigrette.
Dinner - Orange juice, 2 thin deli chicken breast slices.  Curried egg salad with spinach, lettuce, tomato, bell pepper, cucumber, carrots, red onion.

Listen to the Body Pt2

Food & Exercise Diary for Sunday 6/13
Breakfast - Banana, 1/4 cup trail mix (raisin/almond/sunflower/banana chip), gatorade, calcium supplement & multi-vitamin.
Exercise - 8 miles on the trail, 10:55 min/mi avg pace, burned 673 calories, ate 1 Hammer Gel.
Lunch - V8 juice, turkey spinach roll, salad with homemade balsamic vinagrette dressing.  Iron supplement.
Balsamic Vinaigrette Recipe: 3/4 olive oil, 1/3 cup balsamic vinegar, 3 tsp dijon mustard, 1 tsp minced garlic, 1/2 tsp oregano, pinch of salt and pepper.
Dinner - Lemonade, assorted fruit (watermelon/cantaloupe/strawberries/blueberries/grapes), couple of chicken meatballs.

Listen to the Body

Food & Exercise Diary for Saturday 6/12
Sometimes you just have to listen. This past week I have eaten like crap, slept poorly, and drank too much wine.  21 miles in the heat just wasn't going to happen this morning.  Haven't done this before, but I decided to break it up.  13 miles today, 8 miles tomorrow.
Breakfast - Banana, turkey slice, handful of trail mix, gatorade, calcium supplement & multi-vitamin.
Exercise - 13 miles on the trails, 11 min/mi avg pace, burned 1095 calories.  Ate 1 Hammer Gel.
Lunch - Gatorade, pear.  Curried egg salad with chopped celery and spinach.
Dinner - Went to a friend's house.  Roasted chicken breast, salad, slice of watermelon, piece of garlic bread, small glass of white wine.  Dessert - frozen hot chocolate.  Not bad, but not good.

Report for 6/11

Food & Exercise Diary for Friday 6/11
Have to eat/drink well today - 21 mile run planned for tomorrow.  And of course, after last night's "dinner," my stomach is upset.  Imagine that!?!?
Breakfast - Banana, slice of turkey, gatorade, calcium supplement & multi-vitamin.
Lunch - Grape juice, handful of trail mix.  Salad with spinach, tomato, cucumber, carrots, celery, green bell pepper.  Dressing was a little mayonaise, pepper, yellow curry powder.
Exercise - Approx 2 mile walk to AAA branch and back.
Snack - Starbucks non fat green tea frapp, apple.
Dinner - Turkey Spinach Roll (see recipes), mixed frozen veggies.
