Food Diary for Friday 2/26
Breakfast - Blueberry smoothie, 1/2 banana, calcium supplement, iron supplement, multi-vitamin.
Snack - Piece of dark chocolate, celery with natural peanut butter.
Lunch - Hard boiled egg. Salad with lettuce, turkey, tomato, carrots, bell pepper.
Snack - Dried Cranberries
Dinner - 3 chicken breast tenders with fresh salsa, 1/4 kabocha squash, 1 pumpkin muffin.
After dinner I wasn't sure what to do with the leftover squash when I idea came to me... I put together my own "Kabocha Pumpkin Soup." Will try it for a meal tomorrow. Here's the recipe: In a blender, combine 1/2 kabocha squash, 1 cup pumpkin puree, 1 cup vegetable broth, 1/2 chopped onion, 1 clove garlic (onion and garlic sauteed in olive oil), cinnamon, nutmeg, and allspice to taste.
Found the neatest family owned produce shop about a mile from home. A good variety of produce, much of it locally grown, with affordable prices. Bought a couple of items that are always pricey in grocery stores like kiwi, grapefruit, apples, honeydew melon, and a kabocha squash.
