Food & Exercise Report for Tuesday 2/3
Breakfast - 1/2 cup oatmeal with mixed berries, 1 tb flaxseed, cinnamon. Multi-vitamin, grape juice.
Snacks - Mixed nuts, apple.
Exercise - 45 minutes on the treadmill, including a 6x hill repeat.
Lunch - Salad with spinach, cabbage, tomato, bell pepper, carrots.
Dinner - Pork tenderloin with roasted apples and broccoli. Large glass of wine. Wine was a splurge, but during this stressful week I needed a relaxing glass.
Recipe - 1 lb pork tenderloin marinated in 1/2 cup apple juice concentrate, 1/4 cup Dijon mustard, 1/4 cup rosemary, 8 cloves garlic, pinch pepper. Bake at 425 for approximately 40 minutes. Roasted apples lightly covered with wine, mustard, and olive mix. Put in oven for 15-20 min. Pork was great but apples needed to be a little sweeter. A little honey instead of the mustard perhaps?
Like I mentioned yesterday, I am PMSing. Typically when I PMS I crave sweets. Today is a typical day, but instead of craving chocolate and sugar I found myself craving dried fruit like raisins and mango. Hmm, interesting. Better for me eh? That would be a good trend if it continues. Of course, I will allow myself a piece of good dark chocolate from time to time. It would be a sin not to. :)
