Food & Exercise Diary for Monday 2/22
Breakfast - Cantaloupe, honeydew melon, Mol-Honey Oat Muffin, calcium supplement, multi-vitamin.
Snacks - Apple, carrots.
Lunch - Salad with cabbage, tomato, green bell pepper, carrots, broccoli, onion, red curry powder, pepper.
Exercise - 35 min on the treadmill, avg 5.3 mi/hr. Easy recovery run.
Snack - 1/2 Odwalla Super Protein Drink.
Dinner - Curry Turkey Salad. Very yum! Had a handful of dried cranberries for dessert.
Recipe - In a large bowl mix 1/2 tbsp yellow curry powder, 3/8 cup plain yogurt, 1/8 cup olive oil based mayonnaise, 1 tbsp honey, 1/4 ts ground ginger, pepper to taste. Fold in 2 cups chopped turkey meat, 1 chopped granny smith apple, 1 ts lemon juice (on apple), 1/4 cup dried cranberries, 1 tbsp chives, 1 tbsp parsley, 1 chopped celery rib. I am amazed I lost a 1/2" on my hips. I measured it twice. After the junk I ate last week, that really surprised me.
Other notes: Ugh I am stressed out tonight. Usually after a workout and a good dinner, the stress of my day fades away. Not today, not today. I haven't menioned that I work in education, and let me tell you... it sucks in this economy. Politicians apparently don't remember that they went to school. School is a wee bit important, but they keep cutting the blood flow (money) and draining the system while swearing that "education is broken and must be fixed." They broke it.
