Report for 8/1

Food & Exercise Diary for Sunday 8/1
Breakfast - Banana, hard boiled egg, purple muffin.  Calcium supplement & multi-vitamin.
Linch - Joint Juice, Apple.  Carrots & broccoli with TJ's goddess dressing.  2 brown rice cakes.  Not paleo, but was craving something salty and light.  Not much in the cupboards or fridge.
Exercise - 3x18 push ups & crunches. 
Dinner - 100% grape juice, grilled turkey breast and a slice of beef brisket, grilled veggies.   Slice of Gluten Free Fresh Apple Streusel Pecan Cake, recipe adapted from http://www.bettycrocker.com/
Recipe: In small bowl mix streusel topping - 2/3 cup quick cooking oats, 1/3 cup packed brown sugar, 1 cup chopped pecans, 3 tbsp canola oil.  In large bowl beat 1 cup sugar, 6 oz Yoplait Greek Fat Free honey vanilla yogurt, 1/3 cup applesauce, 1/3 cup canola oil, 1 tsp vanilla, 2 eggs.  Add 3 cups gluten free baking mix (rice/potato/tapioca), 3 tsp baking powder, 1 tsp cinnamon, 1 tsp nutmeg, 2 cups finely chopped apples.  Spread batter in greased 13x9 pan.  Sprinkle with topping.  Bake 35 - 45 min in a 350 oven until toothpick comes out clean.  *Today I cut the recipe in half.  Didn't have any eggs or yogurt so substituted mayo and sour cream.  Will use eggs and yogurt when I make it for my Grandma's birthday party next weekend.

While reading "Runner's World Magazine" this morning, I came across an ad for the "Great Prostate Cancer Challenge National Race Series."  My grandpa was recently diagnosed with prostate cancer and is undergoing treatment.  I instantly wanted to get involved, but there aren't any races in California.  The closest race is in New Mexico.  Hmm... project idea?!?  I've sent some emails for more information.  We'll see where this leads.
