Baked Asparagus
Toss stalks in a little olive oil, garlic powder, sea salt, ground pepper. Bake at 425 for 10 - 12 minutes. Until desired tenderness.
Baked Broccoli
Clean and cut spears into bite sized pieces. Toss with olive oil and desired spices. Bake at 400 for 17 minutes or until desired tenderness.
Baked Brussel Sprouts
Clean and cut in half. Toss with salt, pepper, and olive oil to taste. Cook 15-20 min in a 425 oven.
Beef Marinade
1/2 cup low sodium soy sauce, 2 tbsp V8 juice, 1 tbsp olive oil, 1 tbsp lemon juice, 1 1/2 tsp minced garlic, 1 tsp oregano, 1 tsp black pepper.
Beef Meat Loaf
Combine 1 lb lean ground beef, 2/3 almond milk, 1/2 ts dried sage, pinch of salt, 1/2 ts dry mustard, 1/4 ts ground pepper, 2 minced cloves garlic, 1/2 small chopped red onion, 1/2 cup chopped cabbage. Form into loaf on foil-lined pan. Pour unsweetened BBQ sauce on top. Bake uncovered for 50-60 min until int. temp of 160 degrees. Let stand for 5 min.
Caribbean Pork Chops Recipe *Adapted from http://www.crockpot.com/
Combine 1 tsp allspice, 1 tsp black pepper, 1 tsp cinnamon, 1/2 tsp nutmeg, 2 tsp thyme, 1/2 cup chopped scallions, 3 tbsp reduced sodium soy sauce, 2 tbsp fresh ginger, 1/2 chopped bell pepper, 2 tbsp minced garlic, 2 tbsp honey, dash of salt. Process into paste. Coat 3 - 4 lean pork chops. Layer in slow cooker and cook on high for 3 hours.

Saute asparagus, red bell pepper, and yellow onion in olive oil until tender. Add pre-cooked chicken breast meat, minced garlic, and red pepper flakes. Cook until warm. Serve over combo lettuce/spinach. Dash of parmesan cheese on top.
Chicken Stir Fry *Created by me!
Heat a splash of olive oil in a frying pan, add cut pieces of chicken breast tenders. Cook for 5 min, turning occasionally. Add 1/2 package frozen stir fry veggies. At the same time, add TJ's Stir Fry Sauce to taste. Cook for 5 min until chicken is done and veggies are tender. Serve over spinach or rice.
Chopped Curry Salad *Created by me!
Chopped hard boiled egg, turkey, and broccoli mixed with a dash of black pepper, yellow curry powder, and a spoonful of olive oil based mayonnaise. Served over spinach.
Cranberry Pineapple Pork
Combine 1 cup crushed pineapple, 1 cup whole cranberry sauce, dash of pepper. Pour into slow cooker. Place tenderloin on top. Spoon some liquid on top of meat. Cook on low for 7 - 8 hours.
Curried Butternut Squash Soup
Roast squash until soft. Saute 1/2 yellow onion, 2 garlic cloves, 1 tsp curry powder. Put onion mix in blender. Add squash and 1 cup veggie broth. Puree. Pour into pot on stove. Add remaining squash and 1 cup veggie broth, puree. Pour into pot. Bring to boil, simmer for 10 minutes. Stir occasionally. Serve with a dollop of plain yogurt on top (optional).
Curried Carrot Soup
Cook 3 tb olive oil and 3 tps curry powder for 1-2 min. Add 8 chopped carrots, 4 chopped stalks celery, 1 med chopped onion. Cook on medium for 10 min. Add 1 can reduced-sodium chicken broth. Bring to boil, simmer for 10 min or until veggies are very tender. Put in blender in 2 cup portions. Puree. Move to pot and heat through.
Curry Chicken - Thai Style
(Serves 6) In a small bowl, mix 2 tbsp red curry paste with 1 cup light coconut milk. Transfer to large skillet on stove; medium heat. Add 1 1/2 cups light coconut milk. When simmering, add 4 chopped red potatoes. Simmer for 5 minutes. Add 4 chopped carrots, 1/2 chopped red onion, 1 lb boneless chicken breasts cut into thin pieces. Simmer for 15 minutes until potatoes and chicken are cooked.
Curried Egg & Asparagus Salad
Chop asparagus and green bell pepper. Steam for 10 min. Combine with chopped hard boiled egg, ground pepper, yellow curry powder, and mayonaise to taste. Serve over spinach.
Curry Turkey Salad
In a large bowl mix 1/2 tbsp yellow curry powder, 3/8 cup plain yogurt, 1/8 cup olive oil based mayonnaise, 1 tbsp honey, 1/4 ts ground ginger, pepper to taste. Fold in 2 cups chopped turkey meat, 1 chopped granny smith apple, 1 ts lemon juice (on apple), 1/4 cup dried cranberries, 1 tbsp chives, 1 tbsp parsley, 1 chopped celery rib. Farmer's Casserole *Created by me!
Whisk 4 eggs, a dash of yellow curry powder, and a splash of ABOU. Chop onion, cauliflower, broccoli, spinach, turkey breast. Add veggies and meat to eggs. Pour into greased 1 qt baking dish. Bake at 350 for 40 min until knife inserted in center comes out clean.
Kabocha Pumpkin Soup *Created by me!
In a blender, combine 1/2 kabocha squash, 1 cup pumpkin puree, 1 cup vegetable broth, 1/2 chopped onion, 1 clove garlic (onion and garlic sauteed in olive oil), cinnamon, nutmeg, and allspice to taste.
Marinara Sauce *Adapted from http://www.allrecipes.com/
Puree tomatoes with skin to equal 3.5 cups. In a medium pot saute 1/2 cup diced onion, 3 cloves minced garlic, 1 tbsp olive oil. Add tomatoes, 6 oz can tomato paste, 4 tbsp parsley, 1 tbsp oregano, 1/2 tsp red pepper flakes, 1/2 tsp black pepper, pinch of salt, 1/2 cup dry white wine. Simmer for 30 minutes, stirring occasionally.
Mashed Cauliflower Recipe
Bring water to boil, cook cauliflower florets for 10 minutes or until tender. Hand mash with 1/4 cup sour cream (could use ABOU), chives, basil, black pepper, 1/2 tsp minced garlic. Could also put in food processor.
Moroccan Lentil Salad Recipe *Adapted from http://www.allrecipes.com/
Cook 1/2 cup dry lentils in 1 1/2 cups water until tender. In mixing bowl combine 1 can drained garbanzo beans, 2 chopped tomatoes, 4 chopped green onions, 1/2 chopped green bell pepper, 1 chopped red bell pepper, 1 1/2 tb lemon juice, 1/4 cup dried cilantro. Realized after I made it that only 1/2 can garbanzo beans required, but I liked the result.
Omelet Muffins
4 eggs, 1/4 cup cooked ham pieces, 1/2 cup diced peppers and broccoli, ground pepper to taste, 1/8 cup mayonnaise (can be made paleo style, I used a low-fat olive oil based product from the store), 1/8 cup water. Pour into 6 standard muffin cups. Cook in a 350 oven for 28-30 min.
Red Pepper Chicken Breasts
Boil 2 chopped/skinless tomatoes, 1 diced onion, 1 diced red bell pepper, 1 tb parsley, 1 tb basil, 1/4 ts thyme, 1/8 ts cayenne pepper, and 1/4 ts pepper. Simmer for 20 minutes. Puree in blender. Pour over cooked chicken breasts.
Rosemary Chicken
Mix together chicken broth, chopped onion, rosemary, thyme, and garlic. Pour over several boneless skinless chicken breasts. Cook in a 350 degree oven for approximately 1 hr and 15 min.
Rosemary Pork Tenderloin
1 lb pork tenderloin marinated in 1/2 cup apple juice concentrate, 1/4 cup Dijon mustard, 1/4 cup rosemary, 8 cloves garlic, pinch pepper. Bake at 425 for approximately 40 minutes.
Sausage-Stuffed Squash *Inspired by http://www.alrecipes.com/ with a twist of my own.
Cut acorn squash in half. Place face down in glass baking dish with 1/2 cup water. Microwave for 12 minutes or until soft. Let sit for a minute or two. Meantime, heat/lightly brown TJ's Sweet Apple Chicken Sausage in frying pan. Place sausage in center of squash, lightly drizzle with maple syrup.
Spicy Chicken Breast Tenders
Mix 1/3 tb ground cayenne pepper, 1/3 tb ground mustard, 1/3 tb red curry powder, 1 tb olive oil. Rub onto chicken. Cook over medium heat for approx 4 minutes per side.
Spinach Quiche
Whisk 6 eggs, 6 tbsp cooled melted butter, 3/4 cup coconut/almond milk, 1 tsp parsley, 1 tsp minced garlic, 1/2 tsp ground mustard, pinch of black pepper. Mix in chopped turkey breast, 1/3 red onion, 1/2 green bell pepper, fresh spinach. Pour into greased 9" round or 13x9" dish. Bake at 375 for 45 minutes until lightly browned and cooked through.
Taco Salad
Brown 1 lb lean ground turkey, add chopped bell pepper, onion, and taco seasoning mix. Serve with lettuce, tomatoes, and black olives. Very tasty!
Taco Salad 2 *Created by me!
On stovetop, cook 1/2 lb lean ground turkey in a splash of olive oil with 1/3 chopped red onion, blend of spices: 1/2 tsp chili powder, 1/2 tsp cumin, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp ground cayenne pepper. Serve on top chopped spinach. Finish with fresh tomato, chopped red bell pepper, green onion, black olives. Easy and tasty!
Tuna Salad Recipe
Drain 1 can tuna. Dice celery and green bell pepper. Combine with 2 tbsp TJ's sweet pickle relish, 1/2 tbsp parsley, 1 tsp dill weed, 1/2 tsp minced garlic, 1/2 tsp yellow curry powder, 1/2 tsp onion powder, olive oil based mayonnaise to taste. Serve on bread or over lettuce.
Turkey Spinach Roll *Adapted from http://www.allrecipes.com/
Not totally paleo, but pretty darn close. Could probably eliminate oats. Cheese too, but it tastes so good!
Compine 1/4 cup spaghetti sauce, 2 beaten eggs, 1/2 cup quick oats, 1 small finely chopped onion, 2 minced garlic cloves, 1 tsp dried basil, 1 tsp dried oregano, 1 tsp ground mustard. Mix with 1 lb lean ground turkey. On a sheet of wax paper, pat mixture into a 12x8" rectangle. Sprinkle with 10 oz chopped fresh spinach and 1/2 cup reduced fat feta. Roll up jelly-roll style, starting with short side and peeling wax paper away. Seal seam and ends. Place seem side down in a greased baking pan. Brush with spaghetti sauce. Bake, uncovered, at 350 degrees for 50-60 minutes or until a thermometer reads 165 degrees. Let stand for 5 minutes. Serve with remaining spaghetti sauce. Spaghetti Sauce Recipe: 8 oz can tomato sauce, 1 tbsp white wine vinegar, 1 tsp minced garlic, 1 tsp oregano, 1 tsp basil, 1 tsp red pepper flakes.
Wine Rubbed Pork Tenderloin
1 tb coriander seed, 1 tb mustard seed, 1 tb paprika, 2 cloves garlic, 1 tb red wine, 1 tb olive oil, 1 tb canola oil. Rub pork tenderloin and let sit for at least an hour. Cook at 425 for 45 min (well done).
Zucchini Pancake Recipe *Adapted from a family recipe.
Grate zucchini, chop green bell pepper and red onion to make approx 1 1/2 cups. Add 1/2 tsp oregano, 1/4 tsp garlic powder. In a seperate bowl, combine 1 egg, 1/4 cup potato starch, 2 tbsp ABOU. Combine wet mixture and veggies. Cook over medium heat, approx 3-4 min per side until browned and slightly crispy.
