Banana Pancakes
Combine 1/2 cup flour, 1/2 cup whole wheat flour, 1 tbsp sugar, 2 tsp baking powder, dash of cinnamon, dash of salt. In another bowl combine 1 beaten egg, 1/2 cup milk, 2 tbsp canola oil, 1 mashed banana, 1/2 tsp vanilla. Combine wet and dry ingredients. Add more milk for thinner pancakes. Cook pancakes over medium heat.

Brown Sugar Biscuits *Adapted from http://www.allrecipes.com/
Combine 1 cup flour, 1 cup wheat flour, 1/4 cup packed brown sugar, 1 tbsp baking powder, 1/4 tsp cream of tarter, dash of salt. Cut in 1/2 cup butter until resembles course crumbs. Mix in 2/3 cup ABOU and 1 tsp vanilla extract. Knead briefly. Roll out into a large rectangle 1/2 inch thick on floured wax paper. Combine 1/4 cup melted butter, 1/4 cup brown sugar, 5 tsp ground cinnamon. Spread on surface of dough. Roll tightly and cut into 12 equal slices. Place on greased baking sheet. Bake at 375 for 18 min, or until golden brown.

Cran Apple Muffins
Mix 1 cup flour, 1 cup wheat flour, 1/4 cup sugar, 1/4 cup packed brown sugar, 3 tsp baking powder, 2 tsp ground cinnamon, 1 tbsp ground flaxseed, dash of salt. Combine 3/4 cup cranberry juice, 1/3 cup canola oil, 1 egg. Mix wet and dry together. Add 1/2 cup chopped pecans, 2 cups chopped apple with skin. Bake at 400 degrees for 18-22 min, or until toothpick comes out clean.

Flaxseed Bread
Dissolve one package active dry yeast in 1 3/4 cups warm water for 5 min. Mix in 3 tbs honey, 1 tb olive oil, 1 cup ground flaxseed, and 1 1/2 cups whole wheat flour. Slowly add in another 1 1/2 cups flour. Knead for 10 min or until smooth and elastic. Coat a 9x5 pan with oil. Shape into loaf and place in plan. Cover and let rise for 1 hr. Bake at 35o for 40 min. Cool for 10 min then remove.

Masa Cornbread  *Created by me!
1/2 cup all purpose flour, 1/2 cup whole wheat flour, 1 cup masa, 1 tbsp sugar, 2 tsp baking powder, 1 tsp baking soda, dash of salt. 1 egg, 1 tbsp canola oil, 1 1/2 cup milk. Mix dry and wet ingredients, combine. Bake at 400 for 20 min in greased 8" glassware.

Molasses Cookies
Mix 1 cup dark molasses, 3/4 cup packed brown sugar, 1 tsp cider vinegar, egg. Combine 1 cup whole wheat flower, 1 1/3 cup flour, 1 1/2 tsp ginger, 2 tsp baking soda, pinch of salt. Mix the wet and dry ingredients. Bake at 350 for 12 minutes. Cool slightly before removing from pan.

In large bowl mix 1/2 cup flour, 1/2 cup whole wheat flour, 1/2 ts cinnamon, 1 ts baking soda, 1/4 ts baking powder, pinch of salt. In small bowl beat 1 egg, stir in 1 1/4 cup milk, 1/4 cup molasses, 1/4 cup honey, 2 tb ground flaxseed, 1 tb canola oil, 2 cups quick oats. Combine wet and dry ingredients. Stir until combined. Add 2 spoonfuls flour to thicken dough. Optional - add 1/2 cup raisins and/or chopped nuts. Pour into 12-14 muffin cups. Bake at 375 for 20 minutes or until toothpick comes out clean.

Oatmeal Chocolate Cake
In a small bowl, combine 1 3/4 cups boiling water and 1 cup quick oats, let sit for 10 minutes. In a large bowl, cream 1/2 cup softened butter, 1 cup sugar, 1 cup packed brown sugar. Beat in 2 eggs, then oat mixture. Combine 1 cup flour, 3/4 cup whole wheat flour, 2 tbsps cocoa, 1 tsp baking soda, pinch of salt. Gradually add to wet mixture. Stir in 1 cup chocolate chips, 1 cup chopped pecans. Pour into greased 9x13 pan. Bake at 350 for 40-45 minutes, until toothpick comes out clean.

Oatmeal Whole Wheat Quick Bread *Adapted from http://www.allrecipies.com/
Combine 2 cups quick oats, 2 cups whole wheat flour, 4 tsp baking powder, dash of salt. In a separate bowl, combine 2 tbsp olive oil, 3 tbsp light maple syrup, 2 cups ABOU. Combine both mixtures and stir until a soft dough is formed. Pour into a greased bread pan. Bake at 350 for 60 minutes.

Pina Colada Muffins
Mix 1 cup all purpose flour, 1/2 cup wheat flour, 1/2 cup quick oats, 1/2 cup sugar, 1 tbsp baking powder, 1/2 tsp nutmeg, pinch of salt. In seperate bowl, beat 1 egg, add 3/4 cup light coconut milk, 1/4 cup melted butter, 1/4 cup pineapple juice, 2 tbsp crushed pineapple, 1 tsp vanilla extract. Whisk with dry ingredients, add 1/2 cup shredded coconut. Spoon into greased muffin cups. Spoon crushed pineapple and brown sugar mix on top (1/4 cup melted butter, 1/4 tsp cinnanmon, 1/3 cup packed brown sugar, 1/2 cup all purpose flour). Bake at 375 for 30 min.

Potato Biscuits
Mix 1/2 cup all purpose flour, 1/2 cup whole wheat flour, 1/2 cup potato starch, 3 tsp baking powder, 1/2 tsp cream of tartar, dash of salt. In a small bowl mix 1 egg, 3/4 cup sour cream, 1 1/2 tbsp ABOU. Combine wet and dry ingredients. Bake at 450 for 10-15 min, until lightly browned.

Rosemary & Pepper Soda Bread  *Adapted from http://www.dailyunadventuresincooking.com/
Combine and whisk 2 cups all purpose flour, 1 1/2 cups whole wheat flour, 1/2 cup quick outs, 2 tbsp rosemary, 1/2 tsp sea salt, 2 tsp baking powder, 1 tsp baking soda, 3/4 tsp black pepper. In a saucepan melt 1/4 cup butter until browned. Stir into dry mixture along with 1 3/4 cups ABOU. Divide dough in half and form into balls. Place on lightly greased cookie sheet, brush with olive oil and black pepper. Back for 45 minutes at 375 or until a toothpick comes out clean.
