Non-Paleo Recipes

Some of these aren't paleo due to simple ingredients (ex: corn and/or beans).  Others include more non-paleo items.

Artichoke Hummus
1 can rinsed/drained garbanzo beans. Artichoke hearts to taste.  A little olive oil and lemon juice.  Mix in blender.

Cranberry Chicken
6 boneless chicken breasts, 1 can whole cranberry sauce, 1 package french onion soup mix, 1 cup catalina dressing. Place chicken in glass baking dish, pour mixed ingredients on top, bake @ 350 degrees for 75 minutes.

Curried Hummus
1 can garbanzo beans, 3 tsp red curry powder, 1 1/2 tsp minced garlic, 3 tsp lemon juice, 1/8 cup water, dash of salt/pepper/red pepper. Blend in food processor.

Olive Hummus
1 can garbanzo beans, 1 tbsp "bean juice," 1/4 cup manzanilla olives, 1 tsp minced garlic, 1 tbsp olive oil, 2 tbsp lemon juice, 1 1/2 dried basil, 1 tsp dried cilantro, dash of ground pepper. Combine all ingredients in food processor. Puree until smooth.

Pupusas
Mix and knead 2 cups masa, 1 tbsp cumin, and 1 cup water (plus a few tbsp if needed) until thick and moist dough forms. Seperate small portions to create flat rounds 4-5 inches across.  For filling: saute 1 small yellow onion, 1/2 green pepper, 1 1/2 tsp minced garlic. Combine with 15 oz can rinsed/drained black beans, 1 1/2 tsp dried cilantro. Blend in food processor. Mix with grated pepper jack cheese.  Place filling on top of dough round. The more the better! Place another round on top of filling and seal edges. Over med-high heat, fry with a little canola oil for 3-5 min on each side until lightly browned and blistered. Keep warm until ready. Serve with salsa, sour cream, etc.  A time-intensive process best shared with friends.  The work is worth it!

Taco Salad  *Created by me!
Brown 1 lb lean ground turkey with bell pepper and red onion, drain oil/fat. Add 1 can drained corn, 1 can drained black beans, 1 can slightly drained diced tomatos, minced garlic to taste, spices to taste. Serve over spinach (paleo) or use as taco/nacho ingredient (non-paleo). Optional - add olives, salsa, sour cream, etc.

Turkey Chili
Cook 1 lb gound turkey with 1 tbsp olive oil, 1 yellow onion, 1/2 yellow bell pepper, 1/2 tsp minced garlic. When browned, add 15 oz can S&W Caribbean Black Beans, 15 oz can creamed corn, 15 oz can diced tomatoes (partially drained), 1 tbsp chili powder, 1/2 tsp cumin, 1/2 tsp cayenne pepper, 1/2 tsp ground black pepper, 1/2 tsp oregano. Bring to a boil then simmer until ready to serve.

Turkey Chili Version #2
1/2 lb lean ground turkey, 1 can chili beans with sauce, 1 small chopped red onion, 1 chopped green bell pepper, 1/2 drained canned corn, 4 oz tomato sauce, chili powder and cumin to taste.

Veggie Chili Recipe  *Adapted from http://www.allrecipes.com/
Combine all ingredients in crock pot. Rinse/drain 1 can black beans and 1 can garbanzo beans. Add 1 can black refried beans, 1 can diced tomatoes in puree, 1 can drained corn. Add chopped celery, red onion, and bell pepper. Spice with 2 cloves minced garlic, tbsp each of chili powder, oregano, parsley, and basil. Cook on high for 2 hours.
